Ingredients

  • 6 cups cubed seedless watermelon, chilled
  • 1 cup crumbled feta cheese
  • 1/4 cup fresh mint leaves, chiffonade
  • 2 tablespoons extra virgin olive oil
  • 3 tablespoons balsamic glaze
  • Optional: Pinch of flaky sea salt

Instructions

  1. Cube the chilled watermelon into 1-inch pieces and place in a large bowl.
  2. Drizzle olive oil over the watermelon and toss gently to coat.
  3. Sprinkle crumbled feta and mint ribbons over the top of the fruit.
