- 4 boneless, skinless chicken breasts
- 4 tablespoons unsalted butter, divided
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 3 tablespoons fresh lemon juice
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Pat the chicken breasts dry with paper towels and season both sides with salt and pepper.
- Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
- Add chicken to the pan and sear for 5-7 minutes per side until golden brown and cooked through.
- Remove chicken from the pan and let it rest on a plate for 5 minutes.
- Lower heat to medium and add the remaining 3 tablespoons of butter to the same pan.
- Stir in minced garlic and dried oregano, sautéing for 1 minute until fragrant.
- Pour in the lemon juice and scrape the bottom of the pan to release the brown bits.
- Stir in the fresh parsley and remove the pan from the heat.
- Return the chicken to the skillet and spoon the sauce over the meat before serving.
