Description

An elegant seafood dish featuring a molded base of fluffy white rice topped with succulent shrimp seared in a garlic-lemon butter sauce.

Ingredients

Scale
  • 1 cup long-grain white rice
  • 2 cups water or chicken broth
  • 1 lb large shrimp, peeled and deveined
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tbsp lemon juice
  • 2 tbsp fresh parsley, chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Cook the rice in water or broth until tender. Fluff with a fork and keep warm.
  2. Pat shrimp dry with paper towels and season with salt and pepper.
  3. Melt 3 tablespoons of butter in a large skillet over medium heat.
  4. Add minced garlic to the butter and sauté for 1 minute until fragrant.
  5. Increase heat to medium-high and add shrimp in a single layer.
  6. Cook shrimp for 2 minutes per side until pink and opaque.
  7. Stir in lemon juice and fresh parsley, then remove from heat.
  8. Press cooked rice firmly into a ramekin or small cup, then invert it onto a plate to form a stack.
  9. Place the garlic butter shrimp on top of the rice stack and drizzle with remaining pan sauce.
