Ingredients
Scale
- 1 lb large shrimp, peeled and deveined
- 1.5 cups long-grain white rice
- 3 cups chicken broth
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1/2 cup freshly grated Parmesan cheese
- 1 tablespoon lemon juice
- 2 tablespoons fresh parsley, chopped
- Salt and black pepper to taste
Instructions
- Rinse the rice under cold water until clear, then combine with chicken broth in a pot. Bring to a boil, reduce heat to low, cover, and simmer for 15-20 minutes until cooked.
- While rice is simmering, melt butter in a large skillet over medium heat.
- Add minced garlic to the butter and sauté for 1 minute until fragrant.
- Increase heat to medium-high and add shrimp in a single layer. Season with salt and pepper. Cook for 2 minutes per side until pink and opaque.
- Stir in the lemon juice to deglaze the pan, scraping up any browned bits.
- Add the cooked rice into the skillet with the shrimp and garlic butter. Stir gently to combine.
- Sprinkle the grated Parmesan cheese over the mixture and stir on low heat until melted and creamy.
- Remove from heat, stir in fresh parsley, and serve immediately.
