- 8 oz cremini mushrooms, sliced
- 3 tbsp unsalted butter
- 2 tbsp all-purpose flour
- 2 cups beef broth
- 1/2 cup heavy cream
- 3 cloves garlic, minced
- 1 tsp fresh thyme leaves
- 2 tbsp vegetable oil
- Salt and black pepper to taste
Instructions
- Season the beef pieces generously with salt and black pepper.
- Heat vegetable oil in a large skillet over medium-high heat until shimmering.
- Brown the beef in batches, searing each side until a dark crust forms, then remove to a plate.
- Melt butter in the same skillet and add sliced mushrooms, sautéing until golden brown.
- Stir in minced garlic and fresh thyme, cooking for 60 seconds.
- Sprinkle flour over the mushrooms and stir for 2 minutes to cook out the raw flour taste.
- Slowly pour in beef broth while scraping the bottom of the pan to incorporate the browned bits.
- Simmer the sauce for 5-7 minutes until it thickens slightly.
- Stir in the heavy cream and return the beef and its juices to the pan.
- Simmer for another 2-3 minutes until the beef is heated through and the sauce is glossy.
