Description
A tender beef roast topped with a garlic-herb butter crust and served with jammy caramelized onions for a sophisticated flavor profile.
Ingredients
Scale
- 3 lb Beef Roast (Top Sirloin or Eye of Round)
- 4 tbsp Unsalted Butter, softened
- 2 tbsp Fresh Rosemary, finely chopped
- 1 tbsp Fresh Thyme, finely chopped
- 3 cloves Garlic, minced
- 2 large Yellow Onions, thinly sliced
- 2 tbsp Olive Oil
- 1 tsp Coarse Sea Salt
- 1/2 tsp Black Pepper
Instructions
- Preheat your oven to 325F (165C).
- Pat the beef roast dry with paper towels and season all sides with salt and pepper.
- Heat olive oil in a large oven-proof skillet over medium-high heat. Sear the roast on all sides until browned, then remove from heat.
- In a small bowl, mix softened butter, chopped rosemary, thyme, and minced garlic into a smooth paste.
- Spread the herb butter evenly over the top and sides of the seared roast.
- In a separate pan, sauté sliced onions in a tablespoon of butter over low heat for 20-30 minutes until deep golden brown.
- Place the skillet with the roast in the oven. Roast until the internal temperature reaches 135F for medium-rare (approx 45-60 mins).
- During the last 10 minutes of roasting, add the caramelized onions around the beef in the pan.
- Remove the roast from the oven and let it rest on a carving board for 15 minutes before slicing.
