A healthy and delicious twist on sloppy joes, using bell peppers as a low-carb vessel for a tangy, savory meat filling topped with melted cheddar cheese.

- 4 medium bell peppers (any color)
- 1 lb lean ground beef
- 3/4 cup tomato sauce
- 2 tbsp brown sugar
- 1 tbsp Worcestershire sauce
- 1 tbsp yellow mustard
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 cup shredded cheddar cheese
- Salt and black pepper to taste
Instructions
- Slice the tops off the bell peppers, remove the seeds and ribs, and pat the insides dry.
- In a skillet over medium-high heat, brown the ground beef until fully cooked, then drain excess fat.
- Stir in the tomato sauce, brown sugar, Worcestershire sauce, mustard, garlic powder, and smoked paprika.
- Simmer the meat mixture on medium-low for 5-8 minutes until the sauce has thickened.
- Spoon the meat filling into the bell peppers, filling them to the top.
- Top each pepper with a generous layer of shredded cheddar cheese.
- Place peppers in the air fryer basket and cook at 360°F for 10-12 minutes until the cheese is golden and peppers are tender.
