- 1 cup shredded Monterey Jack or Pepper Jack cheese

- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 2 tablespoons fresh cilantro, chopped
- Salt and black pepper to taste
Instructions
- Heat olive oil in a skillet over medium-high heat.
- Add corn kernels and sauté for 5-7 minutes until golden brown and charred in spots.
- In a mixing bowl, beat softened cream cheese and mayonnaise until smooth.
- Stir in cumin, paprika, and garlic powder until evenly blended.
- Fold in the charred corn and shredded cheese using a spatula.
- Stir in the lime juice and season with salt and pepper.
- Transfer the mixture to a baking dish.
- Bake at 350°F (175°C) for 15-20 minutes until the top is bubbly and golden.
- Garnish with chopped fresh cilantro before serving.
