- 2 cups finely grated zucchini (squeezed dry)
- 1 cup creamy peanut butter
- 1/2 cup maple syrup or honey
- 2 large eggs
- 1.5 cups oat flour
- 1 tsp baking soda
- 1 tsp vanilla extract
- 1/2 tsp salt
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- Grate the zucchini finely and squeeze out as much moisture as possible using a kitchen towel.
- In a large bowl, whisk together peanut butter and maple syrup until smooth.
- Beat in the eggs and vanilla extract until well combined.
- Stir in the prepared zucchini.
- Sift in the oat flour, baking soda, and salt, stirring gently until just combined.
- Pour batter into the pan and smooth the top with a spatula.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Cool completely in the pan before slicing into 16 squares.
