Description

A soft, citrus-infused cookie topped with a tart lime buttercream frosting, mimicking the flavors of a classic Key Lime Pie.


Ingredients

  • 3/4 cup granulated sugar
  • 1 large egg
  • 2 tablespoons fresh lime juice
  • 1 tablespoon fresh lime zest
  • 2 cups all-purpose flour
  • 1 tablespoon cornstarch
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened (for frosting)
  • 2 cups powdered sugar
  • 2 tablespoons fresh lime juice (for frosting)
  • 1 tablespoon heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the softened butter and granulated sugar together until light and fluffy.
  3. Beat in the egg, 2 tablespoons of lime juice, and lime zest until well combined.
  4. In a separate bowl, whisk together flour, cornstarch, baking soda, and salt.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined; do not overmix.
  6. Chill the dough in the refrigerator for 30 minutes.
  7. Scoop rounded tablespoons of dough and place them 2 inches apart on the baking sheet.
  8. Bake for 10-12 minutes or until the edges are set but the center is still soft.
  9. Cool the cookies completely on a wire rack.
  10. Beat the frosting butter and powdered sugar, then stir in lime juice and heavy cream until smooth.
  11. Pipe the frosting onto the cooled cookies using a star tip.
