- 4 large eggs
- 1/2 cup shredded sharp cheddar cheese
- 1/4 cup cooked chorizo
- 1 small jalapeño, diced
- 1/4 cup diced tomatoes
- 2 tbsp butter
- 1 tbsp fresh cilantro, chopped
- Salt and pepper to taste
Instructions
- Sauté chorizo in a non-stick skillet until browned; remove excess grease.
- Whisk eggs with salt and pepper until smooth.
- Sauté jalapeños and tomatoes in the pan for 3 minutes.
- Pour beaten eggs over the vegetables and spread evenly.
- Fold edges inward as they set.
- Sprinkle cheese and cilantro over half the omelette.
- Fold in half and slide onto a plate.
