- 2 tbsp extra virgin olive oil
- 1 medium onion, diced
- 2 carrots, diced
- 2 stalks celery, diced
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 can (14.5 oz) diced tomatoes
- 6 cups vegetable broth
- 2 cans (15 oz) cannellini beans, rinsed and drained
- 1 medium zucchini, diced
- 2 cups fresh baby spinach
- Salt and black pepper to taste
- 1 tbsp fresh lemon juice
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onion, carrots, and celery for 8 minutes.
- Stir in minced garlic and dried oregano, cooking for 1 minute until fragrant.
- Add diced tomatoes and vegetable broth. Bring to a boil, then reduce to a simmer.
- Stir in cannellini beans and diced zucchini. Simmer for 15-20 minutes.
- Fold in fresh baby spinach and cook for 2 minutes until wilted.
- Remove from heat, stir in lemon juice, and season with salt and pepper.
