Description

A nutrient-dense, plant-based minestrone inspired by the longevity diets of the Blue Zones. Packed with legumes, fresh vegetables, and aromatic herbs for maximum health and flavor.


Ingredients

Scale
  • 2 tbsp extra virgin olive oil
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups vegetable broth
  • 2 cans (15 oz) cannellini beans, rinsed and drained
  • 1 medium zucchini, diced
  • 2 cups fresh baby spinach
  • Salt and black pepper to taste
  • 1 tbsp fresh lemon juice

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion, carrots, and celery for 8 minutes.
  2. Stir in minced garlic and dried oregano, cooking for 1 minute until fragrant.
  3. Add diced tomatoes and vegetable broth. Bring to a boil, then reduce to a simmer.
  4. Stir in cannellini beans and diced zucchini. Simmer for 15-20 minutes.
  5. Fold in fresh baby spinach and cook for 2 minutes until wilted.
  6. Remove from heat, stir in lemon juice, and season with salt and pepper.
