- 2 tbsp extra virgin olive oil
- 1 medium yellow onion, diced
- 2 medium carrots, diced
- 2 ribs celery, diced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 6 cups low-sodium vegetable broth
- 2 cans (15 oz) cannellini beans, drained and rinsed
- 2 cups fresh baby spinach
- 1 cup frozen peas
- 1/4 cup fresh basil, chopped
- 1 tbsp lemon juice
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, sautéing for 6-8 minutes until softened.
- Stir in minced garlic and cook for 1 minute until fragrant.
- Add diced tomatoes and simmer for 5 minutes to integrate flavors.
- Pour in vegetable broth and cannellini beans. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Stir in baby spinach and frozen peas, cooking for 2 minutes until spinach is wilted.
- Remove from heat. Stir in fresh basil and lemon juice. Season with salt and pepper.
