Description

A nutrient-dense, plant-based minestrone inspired by the world’s Blue Zones. Packed with beans, fresh greens, and aromatics to support longevity and wellness.


Ingredients

Scale
  • 2 tbsp extra virgin olive oil
  • 1 medium yellow onion, diced
  • 2 medium carrots, diced
  • 2 ribs celery, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups low-sodium vegetable broth
  • 2 cans (15 oz) cannellini beans, drained and rinsed
  • 2 cups fresh baby spinach
  • 1 cup frozen peas
  • 1/4 cup fresh basil, chopped
  • 1 tbsp lemon juice
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, sautéing for 6-8 minutes until softened.
  2. Stir in minced garlic and cook for 1 minute until fragrant.
  3. Add diced tomatoes and simmer for 5 minutes to integrate flavors.
  4. Pour in vegetable broth and cannellini beans. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Stir in baby spinach and frozen peas, cooking for 2 minutes until spinach is wilted.
  6. Remove from heat. Stir in fresh basil and lemon juice. Season with salt and pepper.
