Ingredients

  • 1.5 lbs ground beef (80/20)
  • 2 tbsp chipotle peppers in adobo, minced
  • 1 tsp ground cumin
  • 2 cloves garlic, minced
  • 4 slices pepper jack cheese
  • 4 brioche buns
  • 1 ripe avocado
  • 2 tbsp sour cream
  • 1 tbsp lime juice
  • Fresh cilantro for garnish

Instructions

  1. Combine ground beef, minced chipotle, cumin, and garlic in a bowl; mix gently.
  2. Form into 4 patties with a slight indent in the center of each.
  3. Heat a skillet with oil over high heat until shimmering.
  4. Sear patties for 4-5 minutes per side until browned.
  5. Add cheese slices during the last minute of cooking until melted.
  6. Toast brioche buns in a pan with butter until golden.
  7. Blend avocado, sour cream, and lime juice until smooth for the crema.
  8. Assemble burgers with crema, cheese, and fresh cilantro.
