Description

A hearty ground beef meatloaf slow-cooked with a gooey mozzarella cheese center and topped with a tangy tomato glaze.


Ingredients

  • 2 lbs ground beef
  • 1/2 cup breadcrumbs
  • 1 egg, beaten
  • 2 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 8 oz mozzarella cheese, sliced or cubed
  • 1/2 cup ketchup
  • 1 tbsp brown sugar
  • 1 tsp mustard

Instructions

  1. In a large bowl, mix ground beef, breadcrumbs, egg, Worcestershire sauce, garlic powder, salt, and pepper until combined.
  2. Press two-thirds of the meat mixture into the bottom of a crockpot, forming a hollow center.
  3. Place mozzarella cheese in the center of the meat.
  4. Cover the cheese with the remaining meat mixture and smooth the top.
  5. Whisk together ketchup, brown sugar, and mustard; spread evenly over the meatloaf.
  6. Cover and cook on low for 6-8 hours or high for 3-4 hours until internal temperature reaches 160°F.
  7. Allow the meatloaf to rest for 10 minutes before slicing.
