Fluffy buttermilk pancakes decorated with white icing wraps and candy eyes to look like cute mummies. A festive and easy breakfast for kids.

Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 1/4 cups buttermilk
  • 1 large egg
  • 3 tablespoons melted butter
  • 1/2 cup white decorating icing or melted marshmallows
  • 16 small candy eyes

Instructions

  1. In a large bowl, whisk together flour, baking powder, sugar, and salt.
  2. In a separate bowl, beat the egg into the buttermilk and stir in the melted butter.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined; do not over-mix.
  4. Heat a non-stick skillet over medium heat and lightly grease with butter.
  5. Pour 1/4 cup of batter per pancake and cook until bubbles form on top, then flip and cook until golden brown.
  6. Let pancakes cool for 2-3 minutes on a plate.
  7. Using a piping bag, pipe white icing in overlapping lines across the pancake to look like mummy wraps, leaving a gap for eyes.
  8. Press two candy eyes into the gap to finish the mummy look.
