Description

Fluffy buttermilk pancakes decorated with a striking red velvet cream cheese frosting to look like mummies. A perfect festive breakfast for Halloween.

Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 3 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 1/4 cups buttermilk
  • 1 egg
  • 3 tablespoons melted butter
  • 4 oz softened cream cheese
  • 1/4 cup softened butter
  • 1 cup powdered sugar
  • 2 tablespoons cocoa powder
  • Red food coloring
  • Candy eyes (optional)

Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  2. In a separate bowl, beat the egg, buttermilk, and melted butter until combined.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined; do not over-mix.
  4. Heat a lightly greased griddle over medium heat. Pour 1/4 cup of batter per pancake.
  5. Cook until bubbles form on top and edges are matte, then flip and cook until golden brown.
  6. To make frosting, beat softened cream cheese and butter until smooth.
  7. Mix in powdered sugar, cocoa powder, and red food coloring until the desired shade is reached.
  8. Transfer frosting to a piping bag or zip-top bag with a small corner cut off.
  9. Pipe diagonal strips across the cooled pancakes to create the mummy wrap effect.
  10. Add two candy eyes or dots of frosting in the gap between wraps.
