Description

A creamy, one-pan meal combining tender seared chicken and silky egg noodles in a rich chicken broth reduction.


Ingredients

  • 1.5 lbs boneless skinless chicken thighs, cubed
  • 8 oz wide egg noodles
  • 4 cups chicken broth
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 1/2 cup fresh parsley, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add chicken and brown on all sides until cooked through. Remove chicken and set aside.
  2. In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  3. Pour in chicken broth and scrape the bottom of the pan to release the brown bits.
  4. Stir in the dry egg noodles and bring to a simmer. Reduce heat to medium-low and cook, stirring occasionally, until noodles are tender and liquid is mostly absorbed.
  5. Return the cooked chicken to the pan and stir to combine and heat through.
  6. Remove from heat and stir in fresh parsley, salt, and pepper. Serve warm.
