- 1 lb Italian sausage (mild or spicy), casings removed
- 1 package (16 oz) potato gnocchi
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cups fresh baby spinach
- 1 tbsp olive oil
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add sausage and cook until browned and crumbled.
- Add gnocchi to the pan with the sausage. Fry for 3-4 minutes without stirring until golden brown.
- Stir in minced garlic and cook for 1 minute until fragrant.
- Pour in heavy cream and simmer for 2-3 minutes, scraping the bottom of the pan.
- Stir in Parmesan cheese until melted and the sauce is glossy.
- Fold in fresh spinach and cook just until wilted. Season with salt and pepper.
