A classic Southern-style peach pie featuring a handmade, flaky lattice crust and a perfectly balanced, jammy peach filling.

- 2.5 cups all-purpose flour
- 1 cup chilled unsalted butter, cubed
- 1 tsp salt
- 6–7 large ripe peaches, peeled and sliced
- 3/4 cup granulated sugar
- 3 tbsp cornstarch
- 1 tsp ground cinnamon
- 1 egg (for wash)
- Ice water as needed
Instructions
- Mix flour and salt, then cut in chilled butter until pea-sized crumbs form.
- Add ice water one tablespoon at a time until dough forms; chill for 1 hour.
- Toss sliced peaches with sugar, cinnamon, and cornstarch.
- Roll out half the dough and fit into a 9-inch pie plate.
- Fill the crust with the peach mixture.
- Roll out remaining dough, cut into strips, and weave a lattice top.
- Brush the top with egg wash and sprinkle with sugar.
- Bake at 400°F for 20 minutes, then 350°F for 40 minutes until golden.
