Ingredients

  • 12 oz penne or rigatoni pasta
  • 1/2 cup sun-dried tomatoes packed in oil, chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 cups fresh baby spinach
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and black pepper to taste

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  2. Add minced garlic and chopped sun-dried tomatoes; sauté for 2 minutes until fragrant.
  3. Pour in chicken broth and heavy cream, stirring until combined and gently simmering.
  4. Add the dry pasta to the skillet, stirring to ensure noodles are submerged.
  5. Simmer on medium-low heat, stirring occasionally, for 10-12 minutes or until pasta is al dente and sauce has thickened.
