- 1 English cucumber, diced
- 1/2 cup feta cheese, crumbled
- 1/4 cup red onion, finely minced
- 1/4 cup fresh parsley, chopped
- 3 tbsp extra virgin olive oil
- 2 tbsp fresh lemon juice
- Salt and black pepper to taste
Instructions
- Rinse the chickpeas thoroughly and pat them dry.
- Dice the cucumber into half-inch cubes and mince the red onion.
- In a small bowl, whisk together the olive oil and lemon juice.
- Combine chickpeas, cucumber, and onion in a large mixing bowl.
- Pour the dressing over the vegetables and toss gently to coat.
