- 3 lbs beef chuck roast, cubed
- 1 cup BBQ sauce (molasses-based)
- 2 cups beef broth
- 2 tbsp Worcestershire sauce
- 4 large carrots, chopped
- 1 lb Yukon Gold potatoes, cubed
- 1 onion, diced
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- Season beef with salt and pepper.
- Sear beef in oil in a skillet until browned on all sides.
- Deglaze the skillet with a bit of beef broth and pour liquids into the slow cooker.
- Stir in BBQ sauce and Worcestershire sauce.
- Add seared beef, onions, carrots, and potatoes to the slow cooker.
- Cover and cook on LOW for 8 hours or HIGH for 4-5 hours.
