Description
A hearty and savory slow-cooked beef roast featuring a glossy, herbal glaze made from carrots and fresh rosemary.

- 3–4 lb Chuck Roast
- 4 large carrots, sliced
- 3 sprigs fresh rosemary
- 6 cloves garlic, smashed
- 2 cups beef broth
- 2 tbsp Worcestershire sauce
- 1 tbsp cornstarch
- Salt and black pepper to taste
- 2 tbsp cooking oil
Instructions
- Sear the seasoned beef in a pan with oil until browned on all sides.
- Place smashed garlic and rosemary in the bottom of the slow cooker.
- Add the seared roast on top of the aromatics.
- Pour beef broth and Worcestershire sauce around the roast.
- Arrange carrot coins around the sides of the meat.
- Cook on low for 8 to 10 hours.
- Remove meat and vegetables; simmer remaining liquid on the stove with a cornstarch slurry to create a glaze.
- Pour the glaze over the meat and serve.
