Description

A hearty and savory slow-cooked beef roast featuring a glossy, herbal glaze made from carrots and fresh rosemary.


Ingredients

Scale
  • 34 lb Chuck Roast
  • 4 large carrots, sliced
  • 3 sprigs fresh rosemary
  • 6 cloves garlic, smashed
  • 2 cups beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tbsp cornstarch
  • Salt and black pepper to taste
  • 2 tbsp cooking oil

Instructions

  1. Sear the seasoned beef in a pan with oil until browned on all sides.
  2. Place smashed garlic and rosemary in the bottom of the slow cooker.
  3. Add the seared roast on top of the aromatics.
  4. Pour beef broth and Worcestershire sauce around the roast.
  5. Arrange carrot coins around the sides of the meat.
  6. Cook on low for 8 to 10 hours.
  7. Remove meat and vegetables; simmer remaining liquid on the stove with a cornstarch slurry to create a glaze.
  8. Pour the glaze over the meat and serve.
