Description

A creamy and savory Thai-inspired chicken dish made in the slow cooker. Features a rich peanut sauce with ginger, garlic, and lime for a balanced flavor profile.


Ingredients

  • 1.5 lbs chicken breasts
  • 1/2 cup creamy peanut butter
  • 1/3 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tbsp lime juice
  • 1 tbsp grated fresh ginger
  • 3 cloves minced garlic
  • 1 tbsp Sriracha

Instructions

  1. Place chicken breasts in the bottom of the slow cooker.
  2. Whisk together peanut butter, soy sauce, brown sugar, lime juice, ginger, and garlic in a bowl until smooth.
  3. Pour the sauce over the chicken and stir to coat completely.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Remove chicken and shred with two forks, then return to the pot.
  6. Stir shredded meat into the sauce and serve over rice or noodles.
