Ingredients

  • 8 oz Orzo pasta
  • 6 strips Thick-cut bacon, diced
  • 2 tbsp Olive oil
  • 1 tbsp Lemon juice
  • 2 cloves Garlic, minced
  • 1/4 cup Parmesan cheese, grated
  • 2 tbsp Fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Fry diced bacon in a skillet until crispy; remove bacon and save the fat.
  2. Boil orzo in salted water until al dente; drain and reserve some pasta water.
  3. Whisk olive oil, lemon juice, and minced garlic together.
  4. Toss hot orzo into the bacon fat in the skillet.
  5. Stir in the garlic-lemon dressing, parmesan, and crispy bacon.
  6. Fold in fresh parsley and season with salt and pepper.
