- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1/4 cup apple butter
- 1 large egg
- 2 cups all-purpose flour
- 1 teaspoon cream of tartar
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 tablespoons granulated sugar (for rolling)
- 1 tablespoon ground cinnamon (for rolling)
Instructions
- Preheat oven to 350F and line a baking sheet with parchment paper.
- Cream together softened butter and 3/4 cup sugar until light and fluffy.
- Beat in the egg and apple butter until fully combined.
- Whisk together flour, cream of tartar, baking soda, and salt in a separate bowl.
- Gradually mix dry ingredients into wet ingredients on low speed until just combined.
- Refrigerate dough for 30 minutes to prevent spreading.
- Mix the remaining sugar and cinnamon in a small bowl.
- Roll dough into 1-inch balls and roll each ball in the cinnamon-sugar mixture.
- Place on baking sheet 2 inches apart and bake for 8-10 minutes.
- Allow to cool on the pan for 5 minutes before transferring to a wire rack.
