- 2 cups all-purpose flour
- 2 cups granulated sugar
- 3/4 cup cocoa powder
- 2 tsp baking soda
- 1 tsp salt
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 2 large eggs
- 2 tsp vanilla extract
- 1 cup boiling water
- 1 cup creamy peanut butter
- 1/2 cup unsalted butter, softened
- 3 cups powdered sugar
- 2–3 tbsp milk
Instructions
- Preheat oven to 350F (175C) and grease two 9-inch round cake pans.
- Whisk together flour, sugar, cocoa, baking soda, and salt in a large bowl.
- Add eggs, buttermilk, oil, and vanilla; beat on medium speed until combined.
- Stir in boiling water by hand until the batter is smooth.
- Divide batter evenly between pans and bake for 30-35 minutes.
- Cool cakes completely on a wire rack.
- Beat softened butter and peanut butter until creamy, then gradually mix in powdered sugar and milk.
- Frost the first layer, top with the second, and cover the entire cake with remaining frosting.
