- 1/2 cup full-fat coconut milk
- 1/4 cup sweet chili sauce
- 2 tbsp fresh lime juice
- 1 tbsp grated fresh ginger
- 3 cloves minced garlic
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Whisk coconut milk, lime juice, sweet chili sauce, ginger, and garlic in a bowl.
- Marinate chicken thighs in the mixture for at least 2 hours in the fridge.
- Preheat grill to medium-high heat and oil the grates.
- Grill chicken for 6-7 minutes per side.
- Brush with extra marinade during the final 2 minutes of cooking.
- Let meat rest for 5 minutes before serving.
