- 2 1/2 cups all-purpose flour
- 1 cup cold unsalted butter, cubed
- 1 tsp salt
- 1 tbsp sugar
- 4 tbsp ice water
- 3 cups Granny Smith apples, peeled and sliced
- 2 cups pitted cherries
- 3/4 cup granulated sugar
- 1/4 cup cornstarch
- 1 tsp ground cinnamon
- 1 tbsp lemon juice
- 1 egg (for wash)
Instructions
- Pulse flour, salt, sugar, and cold butter in a food processor until coarse crumbs form. Stir in ice water until dough just holds together.
- Divide dough into two disks, wrap in plastic, and refrigerate for 1 hour.
- Toss sliced apples and cherries with lemon juice, sugar, cornstarch, and cinnamon in a large bowl.
- Roll out one disk of dough and fit it into a 9-inch pie plate.
- Fill the crust with the fruit mixture and cover with the second rolled-out disk of dough.
- Trim, crimp edges, and cut slits in the top. Brush with beaten egg.
- Bake at 400F for 20 minutes, then reduce heat to 350F and bake for another 30 minutes until golden brown.
