  • 1 tbsp orange zest
  • 1 cup plant-based milk
  • 1 tbsp flour (for coating fruit)

Instructions

  1. Preheat your oven to 325°F (160°C) and grease an 8-inch round cake pan.
  2. Toss the mixed dried fruits in 1 tablespoon of flour in a small bowl and set aside.
  3. In a large bowl, whisk together the brown sugar and vegetable oil until smooth.
  4. Stir in the orange zest and plant-based milk until well combined.
  5. Sift the flour, baking soda, cinnamon, and cloves into a separate bowl, then gradually stir them into the wet ingredients.
  6. Gently fold in the floured dried fruits using a spatula until evenly distributed.
  7. Pour the batter into the prepared pan and bake for 80 to 90 minutes, or until a skewer comes out clean.
  8. Let the cake cool in the pan for 20 minutes before transferring to a wire rack to cool completely.
