- 2 cups mixed dried fruits (raisins, currants, sultanas)
- 1 cup brown sugar
- 1/2 cup vegetable oil
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground cloves
- 1 tbsp orange zest
- 1 cup plant-based milk
- 1 tbsp flour (for coating fruit)
Instructions
- Preheat your oven to 325°F (160°C) and grease an 8-inch round cake pan.
- Toss the mixed dried fruits in 1 tablespoon of flour in a small bowl and set aside.
- In a large bowl, whisk together the brown sugar and vegetable oil until smooth.
- Stir in the orange zest and plant-based milk until well combined.
- Sift the flour, baking soda, cinnamon, and cloves into a separate bowl, then gradually stir them into the wet ingredients.
- Gently fold in the floured dried fruits using a spatula until evenly distributed.
- Pour the batter into the prepared pan and bake for 80 to 90 minutes, or until a skewer comes out clean.
- Let the cake cool in the pan for 20 minutes before transferring to a wire rack to cool completely.
