  • 1 cup pumpkin puree
  • 1/2 cup maple syrup
  • 2 large eggs
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1/2 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 12-cup muffin tin.
  2. Whisk together pumpkin puree, eggs, maple syrup, and vanilla in a large bowl until smooth.
  3. In a separate bowl, combine whole wheat flour, baking soda, cinnamon, and salt.
  4. Gently fold the dry ingredients into the wet mixture using a spatula until just combined.
  5. Divide the batter evenly among the 12 muffin cups, filling about 3/4 full.
  6. Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow to cool in the pan for 5 minutes before transferring to a wire rack.
