A vibrant and healthy meal featuring citrus-marinated chicken breasts paired with a smoky, charred corn and poblano pepper salad.


Ingredients

  • 1.5 lbs boneless chicken breasts
  • 3 fresh limes (juiced and zested)
  • 3 ears of corn (kernels removed)
  • 1 large poblano pepper, diced
  • 2 tbsp honey
  • 1/4 cup olive oil
  • 1/2 cup fresh cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. Whisk lime juice, zest, honey, olive oil, salt, and pepper in a bowl.
  2. Marinate chicken breasts in the mixture for at least 1 hour in the fridge.
  3. Heat a skillet on high and char corn kernels until browned; remove and set aside.
  4. Sauté diced poblano peppers until tender-crisp; remove and set aside.
  5. Cook marinated chicken in the same skillet for 6-7 minutes per side until cooked through.
  6. Toss corn and poblanos back in with the chicken and garnish with fresh cilantro.
