A vibrant and healthy meal featuring citrus-marinated chicken breasts paired with a smoky, charred corn and poblano pepper salad.
Ingredients

- 1.5 lbs boneless chicken breasts
- 3 fresh limes (juiced and zested)
- 3 ears of corn (kernels removed)
- 1 large poblano pepper, diced
- 2 tbsp honey
- 1/4 cup olive oil
- 1/2 cup fresh cilantro, chopped
- Salt and pepper to taste
Instructions
- Whisk lime juice, zest, honey, olive oil, salt, and pepper in a bowl.
- Marinate chicken breasts in the mixture for at least 1 hour in the fridge.
- Heat a skillet on high and char corn kernels until browned; remove and set aside.
- Sauté diced poblano peppers until tender-crisp; remove and set aside.
- Cook marinated chicken in the same skillet for 6-7 minutes per side until cooked through.
- Toss corn and poblanos back in with the chicken and garnish with fresh cilantro.
