Ingredients

  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan.
  2. Grate the zucchini using the fine side of a box grater, then place it in a kitchen towel and squeeze out excess moisture.
  3. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract and squeezed zucchini.
  5. In a separate bowl, sift together the flour, cocoa powder, and salt.
  6. Gradually fold the dry ingredients into the wet batter using a spatula until just combined.
  7. Pour the batter into the prepared pan and smooth the top with a spatula.
  8. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
