Description

Tender roasted butternut squash glazed with maple syrup, browned butter, and aromatic fresh sage for a perfect balance of sweet and savory.

Ingredients

Scale
  • 2 lbs butternut squash, peeled and cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 3 tablespoons pure maple syrup
  • 1 tablespoon fresh sage, finely chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. In a bowl or on the pan, toss the squash cubes with olive oil, salt, and black pepper until evenly coated.
  3. Spread the squash in a single layer on the baking sheet and roast for 20 minutes.
  4. While the squash roasts, melt butter in a small saucepan over medium heat until it begins to brown and smell nutty.
  5. Stir the maple syrup and chopped sage into the browned butter, simmer for 2 minutes, and remove from heat.
  6. Remove the squash from the oven, drizzle with the maple-butter glaze, and toss gently to coat.
  7. Return the pan to the oven and roast for an additional 10-15 minutes until the glaze is bubbly and edges are caramelized.
