Description

A luxurious roast beef tenderloin seared in a skillet and finished in the oven with a rich garlic, rosemary, and thyme butter baste.

Ingredients

Scale
  • 3 lb beef tenderloin roast
  • 4 tbsp unsalted butter, softened
  • 4 cloves garlic, minced
  • 1 tbsp fresh rosemary, finely chopped
  • 1 tbsp fresh thyme, finely chopped
  • 2 tbsp olive oil
  • 2 tsp kosher salt
  • 1 tsp cracked black pepper

Instructions

  1. Bring the beef tenderloin to room temperature for 60 minutes, then pat dry with paper towels.
  2. Season the beef on all sides with olive oil, salt, and black pepper.
  3. Heat a large oven-safe skillet over medium-high heat. Sear the beef for 2-3 minutes per side until browned.
  4. In a small bowl, mix softened butter, minced garlic, rosemary, and thyme until combined.
  5. Spread the garlic herb butter evenly over the seared beef tenderloin.
  6. Place the skillet in a preheated oven at 400°F (200°C).
  7. Roast until a meat thermometer reaches 125°F (52°C) for medium-rare.
  8. Baste the beef with the melted butter from the pan during the final 5 minutes of roasting.
  9. Remove from the oven and let the meat rest on a cutting board for 15-20 minutes before slicing.
