Description

A fresh and flavorful sheet pan meal featuring tender salmon fillets basted in a lemon-garlic herb butter and roasted alongside crisp asparagus.

Ingredients

Scale
  • 4 salmon fillets (6 oz each)
  • 1 bunch asparagus, trimmed
  • 4 tablespoons unsalted butter, softened
  • 3 cloves garlic, minced
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 lemon (half zested and juiced, half sliced into rounds)
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Place trimmed asparagus on the sides of the pan, drizzle with olive oil, and season with salt and pepper.
  3. Pat salmon fillets dry with paper towels and place them in the center of the pan, skin-side down.
  4. In a small bowl, mix softened butter, minced garlic, lemon zest, chopped dill, and chopped parsley.
  5. Spread the herb butter evenly over the top of each salmon fillet.
  6. Place lemon slices on top of the buttered salmon and around the asparagus.
  7. Bake for 12-15 minutes, or until the salmon is opaque and flakes easily with a fork.
  8. Remove from the oven and immediately drizzle the remaining fresh lemon juice over the entire tray.
